Frati: In August 1973 we opened an Italian restaurant in Trondheim (www.trondelag.com/en). This became the first trattoria e pizzeria in Trondheim. The restaurant is family driven, and established by two Italian brothers from Molfetta. They wanted to give Trondheim the Italian spirit thru food, wine and service. The restaurants main focus is the Italian cuisine, with multiple delights such as pasta, pizza, meat and fish dishes. At day time, our restaurant makes most pizza and pasta, while the evenings the focus is the meat dishes. We also make our own pasta in the restaurant and have our own brewery.
Due to covid-19 restrictions the restaurant is less busy and less crowded.

About the kitchen and restaurant: Our restaurant rooms around 270 guests (includes both inside and outside the restaurant). During summer season, we also seat guest outside and on hectic days we can serve around 1000 warm dishes. In the kitchen, the chefs have each their partie: one for the starter section, one pasta, one grill, and a pizzaioli. During the busy days we might also need a kitchen helper, preparing mice-en-place or helping where it is needed. We seek to keep the Italian culture in the kitchen. The kitchen staff today is build up by mostly Italians. The kitchen is open everyday from 11 am till 11 pm, Sundays from 12 pm till 10 pm.
The kitchen is staffed in total with 11-15 chefs, depending on high or low season. 90% of the kitchen staff are Italians and work here on a full-time basis. In total, the restaurant staff about 45 persons.
Information about the position: We are looking for one full time permanent position as Sous Chef at Frati. You will be responsible for quality control and production of food and the kitchen staff. The nature of the work will be a combination of daytime and evening/weekends. And a combination of working in service (cooking line) and leading the other chef. Our sous chef must enjoy cooking, be a positive person and be a fair and structured leader. We also value «leading by example» and presence from our leaders are important.
General tasks of the sous chef for Frati
- preparing food from the a la carte menu
- following the HACCP-system requirements
- training of new staff
- follow-up conversations with staff
- order of goods and food
- storage control and inventory
- help to keep our food concept and develop the menu
- assure a good collaboration with general manger, floor manager
- assure a good collaboration between the pizzeria and kitchen
Requirements: The applicant must have a chef certificate and well-documented relevant experience with leadership. You should also attach relevant references to your CV and application.
Personal requirements: You must also be service minded, structured and tidy. In the kitchen, you can count on hectic days and should enjoy high speed. You should be a positive person and not be afraid to smile. Our restaurant has a flat hierarchy and you should enjoy motivating the kitchen staff to not only do their best at work, but also be good co-workers and lead by example. You should be a people-person that care about your staff.
Required language skill is English. You must both feel confident in talking in English and comprehend English documents.
Wages: NOK 34 000 – 38 000 NOK gross pr. Month (~3800-4300 EURO), depending on experience and qualifications. You are paid by the hour and the work hours by month can vary between 150-170 hours.
Housing: The employer can assist in housing. Candidate will pay a maximum of 6000 NOK per month.
Contract type: fulltime, shift. First the candidate is given a 3 month contract with possibility for a permanent contract.
Other information: The restaurant is located in the centre of Trondheim with short walking distance to all facilities.
